Ingredients
For Marination
- Chicken (with bone) – 1 kg
- Thick curd (yogurt) – 1½ cups
- Ginger-garlic paste – 2½ tbsp
- Red chili powder – 2 tsp
- Turmeric powder – ½ tsp
- Garam masala – 1 tsp
- Green chilies (slit) – 4–5
- Lemon juice – 2 tbsp
- Fried onions (birista) – 1½ cups
- Fresh mint leaves – 1 cup
- Fresh coriander leaves – 1 cup
- Salt – to taste
For Rice
- Basmati rice – 1 kg
- Water – plenty
- Bay leaves – 2
- Green cardamom – 6
- Cloves – 6
- Cinnamon – 2-inch stick
- Salt – enough for water
For Dum
- Saffron – few strands soaked in warm milk
- Ghee – 4 tbsp
- Rose water – 1 tbsp
- Kewra water – 1 tbsp
