Ingredients

For Marination

  • Chicken (with bone) – 1 kg
  • Thick curd (yogurt) – 1½ cups
  • Ginger-garlic paste – 2½ tbsp
  • Red chili powder – 2 tsp
  • Turmeric powder – ½ tsp
  • Garam masala – 1 tsp
  • Green chilies (slit) – 4–5
  • Lemon juice – 2 tbsp
  • Fried onions (birista) – 1½ cups
  • Fresh mint leaves – 1 cup
  • Fresh coriander leaves – 1 cup
  • Salt – to taste

For Rice

  • Basmati rice – 1 kg
  • Water – plenty
  • Bay leaves – 2
  • Green cardamom – 6
  • Cloves – 6
  • Cinnamon – 2-inch stick
  • Salt – enough for water

For Dum

  • Saffron – few strands soaked in warm milk
  • Ghee – 4 tbsp
  • Rose water – 1 tbsp
  • Kewra water – 1 tbsp
